Soft shell season is in full swing, and we’ve brought in a nice supply, so we expect tomorrow’s shipment to las through Sunday, which means soft shells for Mother’s Day! Friday’s Southern Table Menu looks like this, with Saturday’s and Sunday’s likely to change a little:

Gateau de Sirop with Whipped Cream

Gateau de Sirop is a seemingly ancient Creole recipe which is a simple cake flavored and sweetened with cane syrup, our favorite being Steens. It has a mild molasses flavor that retains the sparkle and spice of a good cane syrup, rather than using sugar and molasses. It’s probably the last of the “winter-into-spring” desserts we’re having, with rhubarb already underway and the season’s bounty in the pipeline. I have to confess a little regret that we haven’t gotten rhubarb in yet, but we’re still a bit overwhelmed by the response since Chicago Magazine named us a best new restaurant. A good problem to have, I suppose, and we’ll have rhubarb in next week!
