Whiskey of the Month for August: Koval Rye Chicago!

Big Jones’s whiskey of the month for August is Rye Chicago By Koval Distillery.  Located just blocks from the restaurant in the Ravenswood Corridor, and a member of the Slow Food Movement, Koval’s practices are a natural fit for Big Jones.

The whiskeys are all made from 100% single-grain mash bills sourced from organic Midwestern farms.  Their aged whiskeys use the barrel mill in Minnesota so they are supporting local sustainable businesses throughout their process.  Rye Chicago is a white whiskey and as its name suggests is made from 100% rye.

The nose on the whiskey is very subtle with hints of vanilla and pepper with the main expression being the aroma of pure of cereal grains.  The mouthfeel is very unctuous, complimenting the nose with a little sweetness to balance out the spirit against the alcohol.  With a hint of citrus on the finish to balance out the spice from the rye, Rye Chicago is a very easy sipping whiskey with a short sweet finish.  To learn more about Rye Chicago or any of the other spirits they produce, Koval offers distillery tours.

It’s free to join the Big Jones Bourbon Society, just ask your server or bartender to sign up on your next visit. You’ll receive a passport to forty of our more than sixty whiskeys. On each visit, members are welcome to one complimentary pour of the Whiskey of the Month (WOM) which will usually (but not always) be a straight Kentucky bourbon whiskey.
