This week, we’re continuing our newly-minted tradition of serving peacemakers every Friday during Lent We’ve also got some gorgeous Escolar from the Gulf, fished out of the West coast of Florida. It has snow-white flesh, and is very closely related to tuna, in fact being known in the sushi trade as “Toro,” or “fatty Tuna.”
