After last weekend’s false start, Spring is finally here this weekend, and with it comes shad roe, the truest sign there can be that there will soon be tulips in planters all across town. Shad roe is a venerated old tradition in coastal Virginia and the Chesapeake area, pairs perfectly with bacon and grits, and has a wonderful rich taste, meaty and not at all fishy.
